It’s Super Bowl Sunday!! Here is my grain free, gluten free , healthy version of a
game day classic. Not to worry – you won’t miss a thing because it tastes so darn good!!!
Ingredients:
- 2 bags of mini bell peppers- cut in 1/2 and seeded
- 1 lb ground grass fed beef or chicken
- 1 jar jalepenos
- 1 can black olives sliced
- 1 tetra pack “refried” black beans
- 1 jar of your favorite salsa
- cojita cheese to to top
- Siete grain free tortilla chips ( optional)
Method:
- heat oven to 400
- place sliced peppers on parchment on a cookie sheet and roast until browned
- in meantime, cook ground meat with salsa in a large skillet
- layer browned peppers on bottom of baking dish
- layer meat mixture on peppers
- spread beans over meat and top with a layer of jalepenos, olives and finish with the cheese
- place in oven until heated through
- eat as is or use siete tortilla chips to dip
