This is such a simple and quick breakfast or snack!! You can eat it right out of the mug or dump it out and take it with you. I love to top with coconut butter, peanut butter, ghee or almond butter
I vary the type of protein powder I use. I vary the fruit i add. Take this recipe and make it your own!
IN A LARGE MUG WHISK TOGETHER:
2 EGGS
1 TBSP COCONUT FLOUR
1 SCOOP PALEO PROTEIN POWDER AZTEC VANILLA
1 HANDFUL OF BLUEBERRIES
2 TBSP COCONUT MILK
1 TSP BAKING POWDER ( NON ALUMINUM)
MICROWAVE FOR 75 SECONDS
