Here is my cauliflower bagel recipe. I have not had a “real” bagel in over 13 years ( when I gave up grains). I do, however, remeber how delicious they were. If you have given up bread< for whatever reason< you may be missing a good ‘ol bagel. If you are expecting the exact taste and chewy on outside, soft on inside texture of a true bagel you may be disappointed. However, these taste delicious in their own way. Most importantly, they are perfect vehicles for your favorite spread. I use almond butter and peanut butter. You could top with ghee, coconut butter, smashed berries, or whatever you desire!
These are pretty simple to make and will last a week when stored in your fridge.. Hope you enjoy!
INGREDIENTS:
4 cups packed cauli-rice. ( pulse rice in a blender or food processor until fine rice like texture)
2 eggs and 2 egg whites. whisked
2 tbsp almond flour
1 tbsp coconut flour
1 tbsp nutritional yeast
1 tsp baking powder
1 tsp garlic powder
1 tsp onion powder
1 tsp celtic sea salt
1 tsp pepper
Everything but the Bagel seasoning for topping ( find at Trader Joe’s)
METHOD:
Heat oven to 400. Line baking sheet with parchment paper
Mix packed cauliflower with all other ingredient except Everything but the Bagel seasoning
Make sure well-combined
Using your hands, scoop enough mixture to form a nice bagel sized ball. Squeeze excess moisture out of each handful.
Shape into discs, place on cookie sheet and poke your finger through the center to create hole
Top each “bagel” with seasoning
Bake for 30 minutes
Let cool before removing from cookie sheet
Store what you don’t immediately eat in fridge
